2007 Cabernet Sauvignon (Reserve)

Both lots of fruit (Cabernet Sauvignon and Merlot) where crushed and fermented independently of each other. The Cabernet Sauvignon fruit was the third and final lot of Cabernet Sauvignon to be picked from the 14-acre Hillside planting. The grapes came in at 27.5 Brix, while the Merlot was picked at 26.0 Brix. This last lot of Cabernet Sauvignon showcases extremely ripe fruit with lush tannins and darker berry aromas. The Merlot was picked at medium ripeness and created a wine with heighten candied-cherries, a smooth coffee bouquet, balanced acidity, and firm tannins. The grapes were crushed then cold soaked for maximum extraction of color, fruit driven aromas, and mouth feel. Both lots fermented fully dry in ten days. The wine was pressed and settled for two days before being barreled down. The Cabernet Sauvignon aged for 16 months in predominately new Oak (a mix of Hungarian and French), while the Merlot aged for 16 months in 100% New American Oak. This wine is a packed with ripe almost raisin like aromas. It has a dominant nose of dark coffee and a hint of tobacco mixed with hay. It has layers of thick textures mellowed out with long tannic backbone. This wine is one to hold onto for years to come. Try it with dark chocolate or a heavy steak.
